Growing up in Minnesota, there’s something about the Fall that really brings back memories from my childhood. Watching the leaves turn and spending time at our cabin, it’s easy to see why it’s my favorite season. The one downside? Trying to avoid the temptation of all the yummy sweets and candies! Many of my favorite memories as a kid consist of visiting apple orchards with my family. The limitless variations of caramel apples, apple cider and other sweets start to tingle my sweet tooth around this time. This Halloween, I thought you might enjoy my own healthy twist on caramel apples that lets me indulge guilt free!
Ingredients:
- 1 cup Medjool dates, pitted
- ½ cup Raw almonds
- 3 tbsp. Coconut oil
- ¼ tbsp. Sea salt
- ¼ tbsp. Vanilla extract
Soak the almonds in warm water for roughly an hour. Proceed to drain them and then process in a food processor with all other ingredients. Process until smooth. You will probably have to stir ingredients a couple times and may have to add more coconut oil, if it is too sticky! It is also okay if if comes out a little chunky! It tastes just as good! 😉 Enjoy!!
