Are you ever craving a delicious treat at home, but scared you may not have all the necessary ingredients to make it yourself? Well, I’m going to let you in on a little secret: there are plenty of essential ingredients that we all have in our pantries at home! And the best part? You won’t feel guilty after you indulge on some sweets!
The Banana Muffin, Chocolate Brownie and Oak Pancake Recipes that I am about to share are all made from the very same ingredients all of which you likely already have laying around.
Banana Muffins:
- 3 tbsp. coconut oil
- ⅓ cup raw honey
- 3 medium bananas, mashed
- ¼ cup almond milk
- 1 tsp. vanilla
- 2 eggs
- 1 ½ tsp. cinnamon
- 1 tsp. baking soda
- ½ tsp sea salt
- 1 ½ cup oat flour
Preheat oven to 350 degrees fahrenheit. Mix all ingredients in a mixing bowl or blender until smooth. Spray muffin pan with coconut oil, so they don’t stick. Bake for 15-17 minutes (10-12 minutes if making mini muffins). Let them cool and enjoy! Makes 12 muffins or 26 mini muffins
Chocolate Brownies:
- 1 ⅓ cup oat flour
- ½ cup coconut oil
- ¾ cup honey
- 1 cup cocoa powder
- 1 tsp. Salt
- 1 tbsp. Vanilla
- 3 eggs
- 1 cup dark chocolate chips
Preheat oven to 350 degrees fahrenheit. Mix all ingredients except the chocolate chips in a mixing bowl until smooth. Fold in the chocolate chips. Spray baking pan with olive oil or coconut oil, so the brownies don’t stick. Pour the mix into the pan. Bake for 30-35 minutes. Let cool for ten minutes, and then dig in 😉
Oak Pancakes:
- 2 eggs
- 1 banana
- 1 tsp. vanilla
- ½ tsp. cinnamon
- ⅛ tsp. Salt
- 1 tsp. Baking powder
- ½ cup almond milk
Place all ingredients into the blender and process until smooth. Heat up pan on the stove to a medium heat. Pour out small pancakes. Turn them over when they start to brown slightly. They cook fairly quickly, so make sure to keep an eye on them! I like to enjoy mine with a little almond butter on the top and some fresh berries!
